Husband-and-wife team Brittney Keophoxay-Lam and Dan Lam have opened a permanent counter inside Lotte Plaza Market on West Colonial — Cambodian and Lao cooking on their own terms, not folded under a generic “Thai” label. The name is personal: “Mae Tao” nods to Brittney’s mother/grandmother figure; “Son’s” points to Dan.
